Chicken and Quinoa Salad

Ingredients for chicken and quinoa salad

Ingredient Quantity How
Quinoa 100 g
Flaked almonds 25 g
Greek yoghurt 80 ml
Olive oil 1 tbsp
Lemon juice 6 tbsp
Honey 1 tsp
Celery 2 sticks
Spring onion 3
Avocado 1
Chicken filet 2 cooked

Method for chicken and quinoa salad

Step 0

Cook 2 chicken filets.

Step 1

Rinse 100 g quinoa well, and drain. Add quinoa and 200 ml of water to covered saucepan. Bring to boil, then simmer for about 10 mins.

Step 2

When quinoa is tender, and have tails remove from heat. Add some paper towel between the saucepan and the lid to absorb some of the excess moisture. Let it sit like that for 5 mins.

Step 3

Toast 25 g flaked almonds in a frying pan on medium-high heat. Toss frequently. Remove from pan when golden (about 2 mins).

Step 4 Make dressing

Combine 80 ml greek yoghurt, 1 tbsp olive oil, 6 tbsp lemon juice, 1 tsp honey in a small bowl. Add salt and pepper to taste.

Step 5

Slice 2 sticks celery, 3 spring onions, and 2 chicken filets, cut 1 avocado into cubes. Add to quinoa along with flaked almonds.

Step 6

Add all ingredients to bowl and toss with the dressing. Season to taste with salt and pepper.
