Easy Cream Cheese Chicken

Ingredients for Easy Cream Cheese Chicken

White button mushrooms 230 g sliced
Garlic 2 cloves minced
Boneless, skinless chicken breast 680 g cut in strips
Plain cream cheese 120 g
Low-sodium chicken broth 1/4 cup
Mozzarella cheese 1/4 to 1/2 cup shredded

Method for Easy Cream Cheese Chicken

Step 1

Heat a large skillet over medium heat and add 2 tsp extra-virgin olive oil.

Step 2

Add chopped onion and 230 g white button mushrooms. Sauté for 4-5 minutes. Add minced 2 cloves garlic and sauté for another 30 seconds.

Step 3

Slice 680 g boneless, skinless chicken breast into strips and season with salt and pepper.

Step 4

Increase the heat to medium-high. Add seasoned chicken strips to the pan. Sear for 6-8 minutes, turning once, until golden brown.

Step 5

Add 120 g plain cream cheese and 1/4 cup low-sodium chicken broth. Stir until the cream cheese is melted and well incorporated.

Step 6

Sprinkle 1/4 to 1/2 cup mozzarella cheese over the pan, then cover, reduce heat, and cook another 2-3 minutes until chicken is cooked through (it should reach 74°C if using a meat thermometer). Season to taste with extra salt and pepper.

Step 7

Serve the chicken and mushrooms over steamed rice, with optional chopped fresh parsley if desired.
