Crispy Sesame Chicken with a Sticky Asian Sauce

Method for Crispy Sesame Chicken
Step 1
Heat 5 tbsp vegetable oil in a wok or large frying pan until very hot.
Step 2
Place 2 lightly beaten eggs in one shallow bowl, 3 tbsp cornflour in another, and mix 10 tbsp plain flour, 1/2 tsp garlic salt, and 2 tsp paprika in a third shallow bowl.
Step 3
Dredge chicken chunks in cornflour, dip in egg, and coat with seasoned flour. Cook in wok on high heat for 6-7 mins, turning occasionally.
Step 4
Remove chicken from pan and place in a bowl lined with kitchen towels.
Method for Sticky Asian Sauce
Step 5
Add all sauce ingredients to the hot wok. Stir and bubble on high heat until sauce reduces by about a third (2-3 minutes).
Step 6
Add chicken back in and toss to coat. Cook for 1-2 mins.
Method for Serving
Step 7
Divide between four bowls. Serve with boiled rice and top with 2 tbsp sesame seeds and chopped spring onions.
