Ingredients for Roasted Fennel

Ingredient Quantity How
Fennel bulbs 4 stalks cut off, bulbs halved lengthwise and cut lengthwise in 2.5cm wedges
Extra virgin olive oil 2 tbsp or more to taste
Balsamic vinegar 2 tsp or more to taste

Method for Roasted Fennel

Step 1

Preheat oven to 205°C. Toss fennel wedges with olive oil and balsamic vinegar in a bowl.

Step 2

Line a roasting pan with aluminum foil brushed with olive oil. Arrange the fennel wedges on the pan and roast for 40 minutes or until caramelized at the edges.

Ingredients for Cream Sauce for Salmon

Ingredient Quantity How
Greek yogurt or sour cream 3/4 cup
Lemon juice 1 tbsp
Honey 1 tsp
Mustard (wholegrain) 1 tsp
Garlic 1 clove finely minced
Chives (fresh) 1 tbsp chopped
Dill (fresh) 1 tbsp chopped

Method for Cream Sauce for Salmon

Step 3

In a bowl, combine all ingredients and whisk until well combined. Serve over cooked salmon.

Small potatoes 400 g
Extra virgin olive oil

Step 4

Add olive oil to small potatoes on an oven tray.

Step 5

Cook in oven for 30 mins (depending on potato size).

Add olive oil, salt, and pepper to salmon.
